Learning to cook is fun. Creating recipes, planning a party, taking care of your family. Having delicious and tasty meals everyday of the week. 

Baking Basics:

Pie Crumb Crust containing 1 1/2 cups graham cracker, gingersnap or vanilla or chocolate wafer crumbs. Makes: one 8 or 9 inch single crust.

Pie Pastry prepared with 2 cups flour. Makes: one 8 or 9 inch double crust.

Butter Cream Frosting made with 1 pound confectioner's sugar ans 1/3 cup butter. Frosts: 8 or 9 inch two layer  cake, or 24 cupcakes.

Cream Cheese Frosting from 6 oz. cream cheese and 1 pound confectioner's sugar. Frosts and Fills: 8 or 9 inch two layer cake or 24 cupcakes.

Royal Icing: made from 3 Tablespoons meringue powder or egg white powder, 1 pound confectioner's sugar and 6 Tablespoons water. Decorates: 8, 9 or 10 inch cake or 36 cupcakes.



         How to know what you need

Making a shopping list for recipes can be tricky if you don't the measurements.

4 cups shredded cabbage         1 sm. cabbage

1 cup grated raw carrot            1 lg. carrot

2 1/2 cups sliced carrots 1 pd. raw carrots          

4 cups cooked cut green beans    1 pd. beans

1 cup chopped onion         1 lg. onion

4 cups sliced raw potatoes   4 med. potatoes

1 cup chopped sweet pepper      1 lg. pepper

1 cup chopped tomato 1 lg. tomatoes

4 cups sliced apples     4 med. apples

1 cup mashed banana     3 med. bananas

1 tsp. grated lemon rind     1 med. lemon

2 Tsb. lemon juice      1 med. lemon

4 tsp. grated orange rind    1 med. orange

1 cup orange juice        3 med. oranges

4 cups sliced peaches 8 med. peaches

2 cups sliced strawberries      1 pint

1 cup soft bread crumbs       2 slices fresh bread

1 cup bread cubes      2 slices fresh bread

2 cups shredded swiss or cheddar chess    8 oz.

1 cup egg whites       6 or 7 large eggs

1 egg whites    2 tsp. egg white powder + 2 Tbs. water

4 cups chopped walnuts or pecans  1 pd. shelled


                   Measure for Measure

Quick: How much cooked rice does one raw cup yield ? Answer: Three cups. Other mysteries about cooking.


 Berries: 1 pint     1 1/4 cups

Butter or Margarine:  1/2 stick   1/4 cups or 4 Tbs. 1 pound       4 sticks or 2 cups

Cream: 1 cup heavy cream      2 cups whipped

Dried Beans and Peas: 1 cup    2 1/4 c. cooked

Herbs  1 Tbs. Fresh          1 tsp. dries

Pasta   8 oz. elbow macaroni  4 C. cooked                       8 oz. med.-wide    3 3/4 cooked                 Noodles 8 oz. fine noodles  5 1/2 C. cooked                        8 oz. spaghetti  4 C. cooked

Rice     1 C. white   3 C. cooked                                       1 C. converted   4 C. cooked                                 1 C. instant 1 1/2 C. cooked                                 1 C. brown   3 to 4 C. cooked

       Stocking your kitchen...Cookware

Stockpot This large pot is great for cooking broths, stocks, stew, pasta, soup, chili. 6 or 8 volume stockpot is good for extra large portions of different uses of meal planning. 

 Dutch Oven have a 4 to 6 capacity and they always have a lid. You can start a meal in a Dutch Oven on the stove top and then finish it in the oven. You can cook pot roasts, Franks/Beans, Coq Au Vin, Moroccan Chicken, Cornbread, Shot Ribs, White Bean Pasta Soup and many tasty recipes. 

Roasting Pan Large, shallow and very sturdy for roasting large whole birds like turkeys, chickens.

Large Sauce Pan/Medium Sauce Pan made with tall, straight sides and tight fitting lids. Great for cooking vegetables, making sauces.

Small Sauce Pan Great for melting chocolate sauce, butter, heat syrup, chocolate or just make 1 cup of hot chocolate. 


              How Sweet It Is

Added sugar is one way to distinguish among the many varieties of chocolate.

Unsweetened, also known as baking chocolate, is bitter, very dark and brittle. you wouldn't want to eat this on its own, but used in baked goods it delivers lots of rich flavor.

Partially sweetened chocolates, called bittersweet or semisweet depending on the manufacturer, tend to vary in flavor and sweetness.

Fully sweetened varieties are referred to as sweet chocolate (if dark)or milk chocolate (if light). Both are excellent choices for either eating or cooking.

White chocolate is made with sugar, cocoa butter, dry milk solids and flavorings. It has a very mild, sweet flavor.Melting this kind of chocolate is tricky. Watch carefully and be sure not to overheat.

Cocoa Powder is unsweetened chocolate that has about 75% of its fat removed. In Dutch-process cocoa, the chocolate is treated with a mild alkaline, which causes the cocoa to become milder, darker and more easily mixed into liquid. 

One ounce of semisweet chocolate has 144 calories, 10 grams fat (5 saturated), 2 grams protein and 16 grams carbohydrate.

Melting Chocolate: It's quick, simple process to melt chocolate in a microwave oven, but be sure to monitor at regular intervals. With this method, chocolate tends to appear solid even after it's softened. First, break chocolate in pieces, then place heatproof bowl. Microwave on high for one minute.                                                                  1. Check to see if chocolate has softened. If not, continue microwaving, checking for softness about every 30 seconds.                          2. When chocolate yields easily to the touch of a wooden spoon, remove bowl from microwave and stir until completely melted and smooth.

Melting Chocolate on stove:                                 Put chopped or chocolate chips in a heat proof pan as in a double boiler. The bottom pan will have water that is barely a simmer. Stir constantly until chocolate pieces are melted and smooth.

Melted "Chocolate" pieces would be great for strawberries, rase berries, marshmallows, cookies. Let your imagination go free.  





                 3 Minute Hot Fudge Sauce                  Makes: 1 Cup                                                      Prep: 15 Minutes                                                  Cook: 5 Minutes                                                  3/4 Cup Sugar                                                        4 Tablespoons water or brewed coffee                1/2 Cup Unsweetened cocoa powder                    1/8 Teaspoon salt                                                  2 Tablespoons unsalted butter of margarine        1 Teaspoon vanilla

 1. Mix sugar and water or coffee in small heavy saucepan; cook over medium heat until sugar is completely dissolved, 2 or 3 minutes.                    2. Gradually stir in cocoa powder and salt completely blended.                                              3. Bring to boiling over medium high heat, stirring constantly.                                                4. Remove from heat. Add butter and vanilla and stir until butter is completely melted.                    5. Spoon immediately over ice cream or another 'favorite' dessert.
